Could FIT files from other devices and apps be adapted to work with your code? E.g. what fields and data are expected to successfully merge latitude & longitude from a Zwift FIT file?

Been so long I can't remember. FIT is a protocol though so any FIT file with the right fields should work. You will need the Garmin FIT SDK

I suspected you may have forgotten about it. I lost track of how many coding projects I forgot about 🤣. I'll try to dig in a bit and see if I can get it working. Thanks!
