Base sample scripts on a. env #64

Makefile, docker-compose.yml, etc. should make it simple to customize the build for local needs. For this, first make them rely on a. env file that would hold the custom configuration. E.g. https://devcenter.heroku.com/articles/local-development-with-docker-compose#docker-compose-tips-and-tricks
