I think the correct admob policy link is the following

The link you provided is for developer, not for final users.

I checked this, I think it is correct as you mentioned. I can go ahead and update it, but would like to get confirmation from someone more knowledgable in this field.

Will keep it open and ask more people about this.

A possible way of updating the Privacy Policy for this would be to reference the AdMob service by Google, how to opt-out from it / how to opt-out from Google's services and a link to Google's Privacy Policy.

AdMob by Google is provided by Google Inc.
