Provide config for GH Dash #5191

Description

Currently the gh-dash module writes a default configuration with no option to change. It would be nice if we were able to provide configuration to home-manager.

A quick look from modules I use shows helix does this nicely https://github.com/nix-community/home-manager/blob/1c2c5e4cabba4c43504ef0f8cc3f3dfa284e2dbb/modules/programs/helix.nix#L170-L206

Memorandum on closing issues

Don't be afraid to manually close an issue, even if it holds valuable information. Closed issues stay in the system for people to search, read, cross-reference, or even reopen – nothing is lost! Closing obsolete issues is an important way to help maintainers focus their time and effort.
