rename: freerdp -> freerdp3 #392

Unstable still packages freerdp v2, so this gives the freerdp v3 in the overlay a more appropriate name and by that avoids breaking gnome-remote-desktop in unstable nixpkgs.

Do you mind changing the "effective" date for this change to, say, June now?

@colemickens Sorry for the delay, updated the effective date now as well and rebased on master.
