Fix characters and save instruction-templates and logs in .textgen #71

This PR updates some substitutions in `projects/textgen/packages.nix:

the characters mentioned in #60 should work now
instruction-templates are saved in .textgen and should work as well
logs are saved in .textgen

I did not get the cache right yet.

This fixes my issue with the character template missing. However I cannot get any models to load. I'm not sure that's anything to do with your PR though.

I tested this and it works well for me. I created a new character and instruction template which were saved correctly. And the chat logs are saved in .textgen. No errors in the application logs.
