Add quarto to the book #36

Perhaps one option is to have a tabbed code block with either:

|| rmarkdown | quarto ||

Might be a pain, but will be necessary for future proofing.

Thinking about this further I think this is how the book needs to go, and might even be renamed "Markdown for Scientists", to be more general, since quarto will work for python and observable and everything.
