feat: updated tanstack router example #236

Hi there, was playing around with vinxi + tanstack and noticed the example was a bit out of date so just update it. In line with https://github.com/TanStack/router/pull/1264. The CSS is a bit wacky and the project cannot be run within the Vinxi workspace as PNPM will try to link it with the local vinxi packages whichi use an experimental version of React and hence they cause the example to error out because it'd be use two different versions of React. Let me know if there is anything missing.
