expose topography, forcings and grid definition in OMUSE interface

This is important to run I-emic and POP either serially or coupled, to ensure same or equivalent topography etc is used (for example: https://github.com/orgs/nlesc-smcm/projects/1#card-18695451):

• [x] expose topography
• [x] grid definition (horizontal)
• [x] grid definition (vertical)
• [x] forcings wind stress
• [x] restoring temp forcing
• [x] restoring salinity forcing
• [x] heat flux (ro?)
• [x] freshwater flux (ro?)
• [x] setting salinity and temperature
• [x] 3D velocities
• [ ] zmax

everything except zmax is now definable through interface...
