Add configuration

Configurations used for the ELK stack. The only differences is that the password is changed in:

• ./kibana/config/kibana.yml
• ./logstash/config/logstash.yml
• ./elasticsearch/config/elasticsearch.yml

For elastic stack, but isn't pushed into github.

Something related is that if we create visualization / dashboard cards in ELK, we would like their configuration saved to file and tracked in this repo so that we still have them when we redeploy the ELK somewhere else.
