It would be great to be able to remove or replace assets

You can! However the functionality is a bit hidden. Go to the settings pane (gear icon), click on the assets tab. There you can view assets and remove them. If you want to replace an asset, first remove it there, then add a new version of it.

I realize the functionality is a bit messy -- we're still going to clean this up.
