Revise understanding.md documentation #162

Expand the material greatly and provide more examples to showcase features.

Provide more background information to help the reader understand more deeply how Meander works so that he/she can reason about the behavior and create and understand more complex use cases.

OK, here's the documentation change in a dedicated branch. Sorry about the hiccup. Ready for review and merge if it looks good.

Excellent, glad you like it. As I said, I'm now working on the operator-overview.md section. Will take me a few days for that, I suspect.
