Update references from Notary v2 to Notation #89

We need to update references of Notary v2 in this repo.

As per the agreement from the Notary meeting today, we will start working on the following issues:

For meeting-notes, we don't change the archived and existing meeting notes. The update will be on the readme.md for the wording Notary v2.

Further discussion needed on the reference in https://github.com/notaryproject/notaryproject/issues/244, which is planned on Thursday community call.
