A "payout schedule" makes sense to me, like what we have for the existing poker game. But also just storing the payout that someone received when you record their position would be easier and more flexible (people might have changing payout schedules).
I think this a fairly important feature, you could imagine a leaderboard ranked by net profit (total winnings - total buy-ins) and a performance chart showing profits over time.
