Option to CC the user and default GDPR text

Hi @novafacile, Happy New Year.

I was making a few changes elsewhere and noticed I had these changes sitting in my local fork and wondered if you'd like to have them.

• Added option to CC the user the message that was sent.
• Added default GDPR text as 'gdprPolicyText' = 'By filling the in above field and clicking on the send button you have consented to your supplied information being transmitted to us via email.
  No personal data is stored within this website.'
• some trailing whitespaces removed

thanks a lot for your input! Currently I'm rewriting the whole plugin. I will include your idea with cc receiver.

Unfortunatly I can't implement the prefilled gdprPolicyText. The legal text must be created by the user of the plugin for legal reasons and risks.
