Thanks for reporting! In order to understand the problem you're having, we would kindly ask you to provide a lot more information. Examples of what we need are such things as what release you're running, what "Sofie-core demo" and "guide" you are referring to (links would be helpful), screenshots, screen captures, etcetera.

I get through the installation procedure and when I get to "Run Migration Procedure" the directory set for persistant storage is always inaccessible.
This sounds like a local misconfiguration of Docker, or something that might have been fixed in later releases. The documentation references an older release (37). We'll look at possibly updating that, but I suggest you begin by troubleshooting your Docker configuration and hopefully solving your issue directly.
If you're using the provided docker-compose path you should enter /mnt/sofie-store
as the "file path for persistant storage" in the first migration step. Doing that I do not have any issues following the guide.

Got a little further! but got this error when installing the demo blueprints
Failed to update blueprints: Error: 500: Error: Blueprint Kx3oLwHrcAnNWCQmv failed to parse [400]

Observed Behavior
So running into an issue with a Sofie-core demo setup. I am unable to setup persistent storage directory, regardless of what file path I pick. Just gives me a file does not exists error. This is after the inital server migration.
Expected Behavior
File directory is set and ability to continue with the guide
