feat(expo): upgrade Expo to v52

Used https://github.com/nrwl/nx/pull/26143 as a guide.

Current Behavior

The current nx plugin scaffolds a project using Expo v51.

Expected Behavior

The nx plugin should scaffold a project using Expo v52.
