Analytics: implement Matomo to replace GA #102

I had this set up but we're going to need to move Matomo to the cluster or a different VM to get it working properly.

Code reverted back to using GA for now.

Matomo set up on 25 May, 2023 implemented via d867bb7f4d5a0e72380cf35197f8877a6b632f6e

We're all set! Let's worry about access for you later, to the analytics. I just checked and it's already tracking visitors.
