Find a source of ISO3166 country codes (numerical codes?)
Do we need to load and keep our DB up-to-date, or can we find a third-party service that we can trust to continue to exist long-term?

We'd want to be able to select multiple countries, too.

That brings the data model in to the equation :) I think it may make sense to call that a separate feature?
