Rename Core Projects as Key Projects, add Mikkel to Core Team list #37

Fixes #17.

This enacts a decision we made nearly 3 years ago, to refer to "core projects" and "key projects", and avoid confusion with The Core Team. Seemed like an easy one to tie up!

I also added @mikkelbu to the list of Core Team members at the same time.

Strangely, we have no standard regarding the needed approvals for minor updates to these docs. I'm taking it upon myself to merge this based on one of us having created it and two others having approved it.
