If you want to write a use case like:
"This use case is similar to UC10 - Find a venue, except that venues are replaced with persons"
whic means you are simply replacing values, without new functionality/steps involved. Then you shall just write a use case with a place holder value. "Find a X" to avoid unnecessary repetition.
(Similar issues for your Appendix B: User stories.)
