Removing vercel.json file

Description

Removed the vercel.json file as it was giving me an issue when deploying to my own Vercel instance. Created my own locally and confirmed that it is not added in the commit.

How Has This Been Tested?

I removed the file that is currently in main and added my own locally. That json works, but is ignored when stashing per the .gitignore.
