feat(project gen): cli/core - project gen file fixes

• quick fix for #328
• bump deps
• • swaps out jsdom for happy-dom for tests. tests should work now (including in ci)
• • bedframe.config is now a default export; cleaned up file
• prep to bump Vite 5 (need to make sure it plays nice w/ CRXjs)
