It would be awesome to be able to edit the reply-to header when composing/replying an email.
Use case
We've a support email address at work which deliver the email to every member of the team. When replying to customer, we reply with our own address but set the support address in the "Reply-To" field, the customer then automatically reply to the support address instead of sender address.
I miss that feature too. Sometimes I need to read what's in the header field, such as Return-Path, Authentication-Results, DKIM-Signature etc.. So huge +1 here !

As seen in Thunderbird allow to do this.
