Based on Gareth's Tweet and explanation post July 30, 2023 Deprecating a Mina Blockchain Explorer, doc updates for hard fork are required

Instead of linking to the deprecated Mina Explorer, update links to working explorers:

• https://minascan.io/mainnet/home mentioned in docs already

• https://minataur.net/ add to docs, shows leaderboard uptime

• https://www.blockchain.com/explorer/assets/mina (does this explorer show pending tx?)

• MinaScan

• MinaSearch

• Minataur

• Minaverse
