Added [[maybe_unused]] to fix release build #693

What does this PR do?

The release build of ROS2 Gem failed due to unused variable.

How was this PR tested?

Project centric, release build on ubuntu 22.04 with Ros2Project template.

This has passed AR, but we're continuing to have reporting issues from Jenkins runs back to Github: https://jenkins.build.o3de.org/job/o3de-extras/job/PR-693/3/

I'll go ahead and override the merge rules for this
