[DOCS] Atom components recategorized #1940

Describe the issue briefly

The ordering of Atom components in O3DE Editor has changed in response to https://github.com/o3de/o3de/issues/10891. We should consider the impact of that change on the documentation. The component reference section may need to be reorganized to mirror O3DE Editor.

This is a fairly destructive change for documentation to address at this time. The component reference topics AND images are organized in directories based on the previous UI groupings. We did this so that they would sort in the ToC the same way they do in the interface. Links will need to be updated, redirects may need to be created, there are likely images and text throughout the docs that need to be updated as well.

Seems like this is just dividing the Atom category up into other subcategories?
