Add JWS JSON serialization example #222

Since SD-JWT allows JWS JSON serialization, we should add an example of how one could do that with SD-JWT VC.

This is blocked by the pending JWS JSON Serialization in SD-JWT: https://github.com/oauth-wg/oauth-selective-disclosure-jwt/pull/414/
