Create a copy of the SD-JWT payload, if required for further processing.

not sure, but might be a need for a clarification of this implementation consideration.

After reading the processing section again, I agree that we can remove this line. I'll file a PR.

I accidentally committed my changes to master instead of a new branch first. The second commit above is the proper one.
