update sd-jwt-vc example yml

addresses issue #272 . updating the spec text and examples in section 4a to align with https://vcstuff.github.io/draft-terbu-sd-jwt-vc/draft-terbu-sd-jwt-vc.html. also updating spec text and examples in section 4b to align with vcdm 2.0 changes note that some of the yml file chages are duplicated in PR #283. cc: @awoie
