A workaround is get the windows projector open before enabling the Apple TV display and then use the + dropdown menu to move it to the other display.
Please retest on OBS Studio 28.1.2 (or newer). Unfortunately, I do not have an Apple TV device to test this against.

Expected Behavior
I expected to see a full screen window on the Apple TV connected display
Current Behavior
I only see a dark gray full screen window, nothing else. Also disabling the Apple TV as a separate display causes OBS to crash

if you attempt to do a windowed Projector before enabling the Apple TV display, it will show the correct video feed. However if you do a windowed Projector afterwards, it is only show a blank gray screen.
