Map export #28

Added some code to export maps and change the chunk working directory to facilitate such; also added appropriate (hopefully) instruction to the curriculum to cover it.

spoke too soon on it running cleanly. Got this error on the last cell, the mapshot(time_map, ....) call:

The way I got this to work was to install mapview from github, as prescribed here: https://github.com/r-spatial/mapview/issues/321

This prescribed many different versions of spatial files, and we need to get a few folks to kick the tires on all the rest of the functionality now i think.
