Pangeo Forge regridding recipe? #13

Given the problems I am running into over at #12, it might be good to talk about ways to move the regridding step into a preprocessing pipeline. Is this something that pangeo-forge could handle in theory?

Yes definitely. It would just need to be wrapped in a preprocessing function.

If the inputs are a single Zarr (rather than many netCDFs), it would also probably need https://github.com/pangeo-forge/pangeo-forge-recipes/issues/242
