Other considerations special to this dataset

Ultimately we need to be able to deal with LatLonCap grid data. This would be enabled by making gcm-filters work with xgcm (do we have an issue for that @TomNicholas?) grid ufuncs and https://github.com/xgcm/xgcm/pull/408?

I am currently looking at the data on pleaides and figuring out how to transfer it.
