Gradle 8.5, Update plugin metadata #44

  1. Updates Gradle to 8.5, (Allows compiling with JDK 21, Validates wrapper now)
  2. Updates the plugin metadata to reflect the current version.

Please test to see if this PR works before merging at all.

@Kichura Hey sorry about that, went ahead and bumped Gradle for now for you in case that helps; gonna leave the plugin.yml changes for ocelot to check out though.
