add mail system config at deployment

May be related: Currently, at least test emails contain Sender: mohamed.meharga@unige.ch in addition to From: field. 'From' is configurable in the GUI, but I haven't found the way to configure this 'Sender' field.

oh it's in like, owner, site admin, there are several relevant places I had to change. grep on the db helps to deduce.

Yes, they should be set. And derived from values.yaml perhaps.
