Adds signing configuration for release artefacts
Updates gradle wrapper to latest

Fixes #479

Additional Notes —

For updating the gradle wrapper, check current versions by reviewing https://gradle.org/releases/ then running an update similar to ./gradlew wrapper --gradle-version 8.1.1
