Setup docs chapter on simulation #36

With this PR, the documentation of the simulation model is set up. I open this PR before the implementation is actually finished to be able to already discuss the underlying concept and the workflow how the workflow will look like.

There are still some instances of U_spez (correct would be U_spec).

The formula under "Hydrostatic pressure difference" is not rendered correctly.
