JSON already has UTF-8 enforced. Possibly YAML and HTML should also have it? (Haven't looked at all whether it's necessary/useful/not harmful.)

Hopefully solve #18. (Not tested...)

Confirmed, fixes Axel's issue :ok_hand: :grin: can recreate without this PR, and it no longer occurs with it
