Update documentation to reflect new versions of JSON #209

Is your feature request related to a problem? Please describe. I am trying to get more and more front-end developers to use our common backend data. I want to share our APIs with them and I don't have a consolidated list of APIs to share.

Describe the solution you'd like

  1. Ensure APIs for all resources are available
  2. Update the readme at https://github.com/coronasafe/life to reflect the new version

Describe alternatives you've considered I have already tried appending _v2 to multiple APIs. I could find oxygen and hospitals only.

Additional context Today's focus will be to get everyone to use the common backend APIs.
