Cleanup Request

The codebase was getting to be pretty large, which is hard to follow in a single directory.

Stipulations

I tried to not update any code in this commit, however, the small changes I made to the screensaver were already commited when I made the two cleanup passes.

Methodology

vsCode Format Document pass

• I used the Format Document command on all the files. This allows me to use this in the future without causing lots of small edits on any future commits.

Re-organization pass

• I tried to group similar code together, so all of the omx-mode-* items are now in the modes directory, along with their helper files.
• Any code that is used in multiple places got put in the utils directory
• the main Omx-27-firmware.ino, config.cpp, and config.h stayed in the src/ directory

This was a fair amount of work, even though I sped it up by using Copilot. I'm open to discussion about where I put files, but really feel strongly that a cleanup pass is necessary for this repository's code-base.
