For DNA k-mers, can use Jellyfish. Somehow there is a Jellyfish2? Otherwise I know only of Jellyfish to extract raw DNA k-mers
For Protein k-mers, would need to use https://github.com/czbiohub/extract_kmers (cc @phoenixAja and @neevor)

This would be useful to use downstream with a MinHash LSH/MinHash LSH Forest for indexing and searching: https://github.com/czbiohub/nf-kmer-similarity/issues/24
