Renamed hindbrain folders and files to be more descriptive.
Removed the estop and softswitch files, as they are included in the OAK library. Included an install script in the base of the gravl repo to make installing OAK easy.
Updated the names of some variables/constants to be more descriptive.
Went ahead and added functionality for wheel encoders for when we get them.
Moved the RoboClaw code into a class and cleaned up the main file
Need to do

[ ] Add Estop case where the RoboClaw has an error/is not responding
