Use ome/action-gradle to install Gradle and Java

The failure is not related to the proposed changes. One test is currently failing. The build has been failing for the past few months due to the Gradle version installed (Gradle 8). This PR now fixes the issue. cc @joshmoore

Excluding the S3 tests for now allows to fix the Gradle build that has been broken for several months. Checking why they do not pass should be looked at in a follow-up PR
