It seems to me like the docker-compose configurations in this repo either hook up to an OMG Network on a testnet (Ropsten) or some local dev instance.

Would it be possible to provide a configuration that is compatible with OMG Network V1 Mainnet?

Ah sorry, I just found https://docs.omg.network/watcher/run-watcher-locally which should pretty much serve exactly this purpose.
