Updates problem-builder demo course for Eucalyptus

The existing Problem Builder Demo course doesn't work with the current Eucalyptus release. This change adds a course/course.xml file which provides the chapter list, and ensures the course can be imported successfully into Studio.

Testing instructions:

1. Download the tar file from this branch: demo-courses-jill-eucalyptus-problem-builder.tar.gz
2. Create a course in the current master Studio.
3. Import the downloaded course tar.gz.
4. Check the Course Outline, and ensure that all 5 chapters are in place: Introduction, Setup, Usage, Configuration Options, Supported Question and Content Types.
