[SE-5068] refactor: use openedx GitHub org instead of edx #864

Description

This PR replaces the edx GitHub org in the configuration and hardcoded URLs with openedx reflecting the organizational changes done recently.

Supporting information

As part of the task, the P&T and other client instancess will need to be redeployed manually.

Thank you for the review, @keithgg! The app server launch is not pending. It is already started you just need to accept the custom certificate provisioned for the staging instance.

@gabor-boros I'd created a new sandbox and was checking to see if it'd launched (and it did!).
