Rename section titles #2

Instead of providing a list of days and exercises, section headings should describe the content:

In the context of the 5 day sync course this is helpful to guide students in the live sessions. We have a programme that lists what is where: https://open-ephys.github.io/ephys-course/EEA/index.html

But I see how that can be confusing for standalone consultation of the materials or our self-paced course.

Maybe adding an additional level to the side TOC helps in addressing this.
