Add optional step for DocBook vs. Geekodoc validation

This PR contains the following changes (to document issue #18):

Adapt README.rst to add additional, optional step. Validation is now possible between DocBook or Geekodoc with the help of the DOCBOOK5_RNG_URI env variable, passed to the docker run.
