Fix diagrams to use clear contrasting colours #207

Diagrams such as https://openactive.io/open-booking-api/EditorsDraft/1.0CR3/#roles-and-responsibilities-overview are not suitable for those who are red/green colour blind.

As a Colourblind person (Red-Green/Deuteranopia), I can confirm that those colours are reasonably distinct.
